My husband is a pescatarian and I rarely cook meat anymore unless he is out of town. In addition to fish, I've made some delicious veggie entrees, like a delicious spicy and sweet roasted tofu and squash dish we had the other day. When we eat fish, I usually have 2-3 vegetables on the side. I like to think that this diet will help me stay healthy longer. Time will tell. but in the meantime, I find it very satisfying and tasty.
